BLT Macaroni Salad

This macaroni salad – a play on the traditional BLT – is far better than your traditional potluck alternative. Although in this case, we’ve substituted lettuce for spinach to increase the nutrient value and added some unexpected vinegar to tweak the flavor just a bit. Try it and you’ll be delighted!

  1. 16 ounces elbow macaroni, uncooked
  2. 3/4 cup mayonnaise
  3. 1/4 cup sour cream
  4. 3 tbsp rice vinegar
  5. 1 tsp garlic powder
  6. Salt ground black pepper
  7. 8 pieces of bacon, chopped
  8. 1 tomato, seeded and chopped
  9. 1 cup baby spinach, chopped
  1. Cook macaroni according to package instructions. Drain.
  2. Mix together the warm pasta and vinegar. Let stand for 5 minutes
  3. Mix together remaining ingredients, and toss with macaroni until combined.
  4. Cover and refrigerate until ready to serve.
