Avocado Brownies

Adding something strange to desserts isn’t something I’m usually very fond of doing… however, in this case it really works!

I think the main reason this works so well is because of the high amount of “good” fat in avocados. It helps to keep the texture chewy and the avocado-taste doesn’t compete with the chocolate, so you’re still left with a delicious chocolatey taste!

  1. 1 ½ cups chocolate chips, melted
  2. 2 medium ripe avocados, mashed
  3. 1 cup sugar
  4. 4 eggs
  5. 2 tsp vanilla extract
  6. ¼ cup cocoa powder
  7. ½ cup all-purpose flour
  8. ½ tsp salt
  1. Preheat oven to 350°F. Prepare a 9x9-inch baking pan with cooking spray and line with the bottom with parchment paper.
  2. In the bowl, beat together the avocados and sugar until creamy.
  3. Beat in melted chocolate.
  4. Beat in eggs, one at a time.
  5. Beat in vanilla extract.
  6. In another bowl, whisk together cocoa powder, flour and salt.
  7. Slowly add the avocado mixture to the wet mixture and beat until just combined.
  8. Pour the batter into the prepared pan.
  9. Bake for about 30 minutes or until a toothpick comes out clean.
  10. Remove from pan and cool for 15 minutes on a wire rack.
  11. Cut into squares and eat, just be sure to same some for others!
