Family Night Mexican Pizza

Now, this might not be the most traditional dish in your international cooking repertoire, but it’s fun to make and something the whole family will enjoy. The great thing about this dish is it’s flexibility…. swap out ground beef for leaner ground chicken, replace refried beans for black beans, sneak in some fresh spinach or get extra wild with some avocado! The choice is yours!

  1. 1 can refried beans
  2. 2 cups rotisserie chicken, cooked and shredded
  3. ½ cup salsa
  4. vegetable oil, or cooking spray
  5. 4 flour tortillas
  6. 1 can red enchilada sauce
  7. 8 oz. Mexican cheese, shredded
  8. 2 green onions, sliced
  9. 2 tomatoes, diced
  1. Preheat your oven to 350ºF.
  2. Spray both sides of tortilla with cooking spray and heat on skillet until lightly crisp.
  3. Lay four of the toasted tortillas on a large baking sheet. Spread enough refried beans on each tortilla to cover.
  4. Mix salsa and chicken in a bowl and divide among the four tortillas. Top with another toasted tortilla.
  5. Spread a thin layer of enchilada sauce on the top of each tortilla.
  6. Sprinkle the top of the four pizzas with cheese.
  7. Bake in preheated oven for 6 minutes, or until the cheese is melted.
  8. Cut and serve immediately.
  9. Enjoy!
